Happy New Year! Hope everyone had a great 2015 and hope we all have an even better 2016. I’m kicking this year off with a delicious healthy recipe: Creamy Spaghetti Squash with Sun-Dried Tomatoes, Mushrooms, and Spinach.
Welcome back! You didn’t know this until now, but you are in the middle of the Cauliflower Trilogy! I am using one recipe (the cauliflower purée), modifying it (into this cauliflower sauce), and creating a new recipe (Creamy Spaghetti Squash with Sun-Dried Tomatoes, Mushrooms, and Spinach – coming very soon). Fun, right?
This stuff is so good.. it’s so silky and creamy, I don’t even miss mashed potatoes. I have tried mashed cauliflower and it doesn’t even come close to this cauliflower purée. I think I could eat this whole recipe on my own, all at once. And I could.. because a large head of cauliflower is only 200 calories with tons of potassium, protein, fiber, and vitamin C.
My fiancé and I had our three year anniversary last month. (3 years already! Crazy how time flies!) It was our last anniversary before we would be married and would have a new anniversary date.
I have been wanting to go to a restaurant called Recess for about a year now and we finally went there to celebrate. The chef and owner of this restaurant, Greg Hardesty, is one of the best chefs in Indianapolis and I couldn’t wait to try one of his four-course meals.

Some of you may know that I have a major sweet tooth. This might not be obvious since most of the recipes found here so far are not desserts. That is because making desserts, especially baking, is too much of a science for me. I just like to throw things in a pan and make good flavors!
So I decided that rather than staying away from desserts, I will test out other bloggers’ recipes and post the results and thoughts here! The goal is to learn more about how to make desserts and then eventually I may actually come up with some of my own recipes. I think this is going to turn into a whole new “Recipe Reviews” section!

I can’t believe Thanksgiving is this week already! What are you making for Thanksgiving? If I need to bring something to a gathering, sometimes I like to try out new desserts. This year I decided to bring a broccoli salad as a side dish though because there is usually more than enough sweets at my family’s Thanksgiving. Of course it’s going to be a healthy side dish!
I love broccoli salad, aside from the raisins (yuck)! But I do not like that it’s loaded with mayonnaise and sugar. I came up with a healthier broccoli salad that I can actually feel good about eating.
