Pumpkin Turkey Meatloaf

Happy fall everyone! I can’t believe it’s officially the first day of fall already! I am super excited to share this fall recipe with you: pumpkin turkey meatloaf. It’s one of my favorite recipes and I don’t think it should be restricted to making only during the fall, by the way.

Before my fiancé and I even got engaged, he told me that there are a few of his mom’s recipes that I would have to learn and that I cannot modify them one bit. Meatloaf is one of those. I told him that was fine, but that I would make my versions as well and they would be too different to try to compare. This recipe is one of those versions. He seems to be okay with that!

The only problem with this recipe is that it’s gone way too fast! I usually make two loaves at a time so I don’t have to cook again that same week.

Ingredients
  • Meatloaf:
  • 1 lb ground turkey, 99% lean
  • ½ red bell pepper, finely diced
  • ½ red onion, finely diced
  • ½ can pumpkin puree
  • ½ cup rolled oats
  • 1 egg
  • 1 Tbsp worcestershire sauce
  • ½ Tbsp chili powder
  • 1 tsp cinnamon
  • ½ tsp cayenne pepper
  • ¼ tsp salt
  • ½ tsp pepper
  • ----------------------------------------------------------------
  • Glaze:
  • ⅓ cup pumpkin puree
  • ⅓ cup ketchup
  • ½ Tbsp worcestershire sauce
  • ⅛ tsp cinnamon
  • ½ tsp chili powder
  • ⅛ tsp cayenne pepper
Instructions
  1. Preheat oven to 350F. Spray a loaf pan with cooking spray.
  2. In a large bowl, mix together all meatloaf ingredients.
  3. Place mixture into the loaf pan.
  4. In a small bowl, mix together ingredients for the glaze.
  5. Spread 3-4 Tbsp of the glaze over the meatloaf.
  6. Bake for 45 minutes.
  7. Remove pan from oven and spread another 3-4 Tbsp of the glaze on top.
  8. Bake for another 20-25 minutes or until food thermometer reaches 165F.
Notes
You may use all of the glaze ingredients to top the meatloaf or save some to use as a sauce.
