We have been making smoothies in a blender since kids, blending is nothing new. Juicing is not a new thing either but it has become very popular recently. I have only tried juices one time from The Garden Table in Indianapolis and they were so delicious! I do not make juices at home though. I actually prefer blending because I like to keep as many nutrients as possible in my drink. Some people may not like the pulp in a blended drink and may prefer juicing. It’s finally warm outside! I’m so excited it’s spring! What could be better in the spring than a fresh salad? I know, probably a lot of things.. This Green Apple Brussels Sprout Salad with Smoked Gouda is my favorite salad though and I can’t wait to make it again. I served this salad at a party and lots of people were wanting the recipe – well the recipe is finally here!
My life has been crazy busy lately with my work schedule and wedding planning and I have not been able to work on the blog as much as I would like. I thought this would be a great opportunity to share how I eat healthy when I don’t have time to cook whenever I would like. I’m going to share what my routine has been like the past couple of months and how I have stayed on track without the extra time to whip up creative, healthy dishes.
One thing to note is that I do NOT miss out on unhealthy food splurging. There have been multiple birthdays or other celebrations and other weekly unhealthy lunches and/or dinners. I try to eat healthy 75 – 80% of the time and it has been working for me. (Side note, I have also been exercising about 3 – 4 days per week because I have a sedentary job and I need to get up and move at some point.)
Eating healthy doesn’t have to be creative. If time permits, it helps to be creative so eating healthy doesn’t get boring and bland over time, but that’s not always possible. I’m going to share my breakfast, lunch, dinner, and dessert go-to options. This is what I’ve been doing to make sure I fit into my wedding dress in May! (more…)
Lasagna is a delicious comfort food. Of course with so much cheese and pasta, you can’t really eat it every day, even though I know you want to. 🙂
What if I told you that you could make lasagna and eat it every day? I have already made this low carb slow cooker lasagna twice in one month and the best part is that my fiancé absolutely LOVES this recipe. That’s a big deal because he loves his mom’s lasagna and it’s tough to compete with an Italian family’s lasagna!
What makes this lasagna so healthy? Well, a couple of things:
I absolutely love Russian crepes, or blini as we call them. You can make sweet or savory crepes or even eat them plain. These Avocado and Crab Stuffed Crepes are great savory crepes which can be eaten for breakfast, lunch or dinner, or all three. 🙂
I served these Avocado and Crab Stuffed Crepes at a get-together with a few friends (my taste testers) and they were a big hit! I only had one crepe left to save for later. It refrigerated well and was still good the next day. They don’t last long, so I can’t tell you exactly how long they would last in the refrigerator. (more…)
Happy New Year! Hope everyone had a great 2015 and hope we all have an even better 2016. I’m kicking this year off with a delicious healthy recipe: Creamy Spaghetti Squash with Sun-Dried Tomatoes, Mushrooms, and Spinach.
The creaminess comes from a cauliflower sauce and this is one of my favorite ways to use the cauliflower sauce recipe.
